Long-term energy gets burned first from fat, then from glycogen storage, as I understand it. In distance runners, we traditionally pack our glycogen stores with carbs, but Novak doesn't do that. However, he clearly has lots of energy reserves for the long matches, even since he laid off of the gluten, so they must have something that packs the glycogen reserves. I think the worry that he would start eating muscle is extreme. Plus, players can eat and drink at change-overs. It's not like he's running a 100 miler.
